Looking for an easy, delicious, and one pan fish recipe ? This recipe based on FreshDirect’s version will fit the bill. It’s roasted. So I’m all in, as I have sworn off pan frying and the inevitable odor. I used some beautiful ripened heirloom red and yellow tomatoes that I had on hand . They were magical roasted alongside of the flounder.

ingredients
• 1 red beefsteak heirloom tomato
• 1 yellow beefsteak heirloom tomatO
• Salt
• Pepper
• 6 sprigs of thyme
• 6 tbsp olive oil
• 4 5-7 oz flounder fillet
• 1/2 cup panko
• 1/2 cup grated parmigiano reggiano
cooking steps
Preheat oven to 450 F.
Roughly dice the tomatoes into 1 in chunks.
Toss tomato chunks, 3 tbsp of olive oil, salt, pepper and thyme in a large bowl. Let sit for 10 minutes. Transfer to foil lined sheet pan.
Pat dry flounder fillets. Coat both sides of the fillets with salt, pepper and 2 tbsps olive oil. Fold each fillet in half lengthwise. Transfer to foil lined sheet pan next to the tomatoes.
Combine panko, parmigiano reggiano, 1 tbsp olive oil in the same bowl that mixed the tomatoes. Sprinkle mixture over tops of fish.
Roast for 12 -14 minutes. Broil for 2 minutes to brown the top.
