oven roasted Arctic char
Another one of my go to fish recipe is roasted (of course) Arctic char. I make it at least 2 times a month!
This recipe came from the cookbook of our beloved elementary school. A bunch of parents at our local elementary school was super enthusiastic about wellness in cooking and decided to put together a cookbook based on recipes from the school community. We put in countless hours towards this cookbook with the goal of raising awareness to wellness and money for the school.
My favorite fish recipe from the cookbook was called ‘grandpa’s salmon’. I love this recipe because it fits all my requirements for a fish recipe - it is roasted not pan seared, which means no smell, no grease & splatter. And it’s delicious, yet simple.
I made the dish a few times with Arctic char which is really similar to salmon when I wanted a change of pace. Overtime I decided that I really like char eith this recipe because it’s fattier and more moist.
If you like easy, oven roasted, no fuss fish recipes, try this one. It’s savory, sweet and fragrant at the same time.
ingredients
• 4 5-7 oz fillet of arctic char
• 1/2 cup soy sauce
• 1/4 cup white wine
• 1-2 tbsp honey
• 1 tbsp lemon juice
• 1 nub of ginger
• 2-3 scallions, chopped
• 1/4 olive oil
steps
Preheat oven to 400 degrees with empty enameled cast iron pan.
To a ziploc bag, add soy sauce, wine, honey, lemon juice, ginger, scallion, as n sad lastly olive oil. Close bag tightly and mixed the marinade. Add char into the marinate and close tightly. Marinate for at least 20 minutes.
Remove pan from oven, add char skin side down. Watch out the fish will sizzle. Return pan with char to the oven and roast for 18-20 minutes.
Remove pan from the oven, pour in the marinade. Return pan to the oven and broil for 3 minutes until top of the fish is browned.
Serve with your favorite veggies or grains.
