Try this crispy zucchini fries the next time you need fries at home to spruce up your sandwich or steak.  Don’t buy even the healthiest bag of frozen fries.  The crunchy panko Parmesan herb coated tender zucchini fries will amaze you.  And it’s healthy.

ingredients

• Olive oil a
• 1/2 cup of flour
• 2 medium or 3 small zucchini
• Salt
• 1 cup of Panko
• 1/2 cup grated Parmigiano or Parmesan
• 1/2 tsp each of dried basil, oregano or any other Italian spices
• eggs

cooking steps 

  1. Preheat oven to 425 F

  2. Line baking sheet with foil.  Coat foil with olive oil evenly.

  3. Add flour into a gallon sized ziploc bag.

  4. Cut zucchini into sticks 2-3 inch sticks like French fries.  Lightly salt the sticks.  Add zucchini sticks to floured ziploc bag.  Toss to coat.

  5. Mix together Panko, Parmigiano, basil, oregano or other Itslian herbs.

  6. Wisk eggs in a small shallow bowl.

  7. Dip each zucchini stick in egg, let excess egg drip off.  Coat each stick with Panko mixture.  Arrange on greased baking sheet.

  8. Bake in oven for 25 minutes or until golden brown.
