It’s super easy to turn a can of plain black beans into a delicious, healthy side for tacos, vegan filling for quesadillas or a simplle meal of rice and beans.  No need for all night soaking of dried beans.  Add some super common staples of onions, tomatoes, jalapeños peppers and spices.  Simmer for 15 - 20 minutes and it’s all set. 

ingredients:

  • 1 tbsp olive oil

  • 1 small onion, chopped

  • 1 plum tomato, chopped

  • 1 jalapeño, chopped

  • 1 tsp minced garlic

  • 1/4 tsp ground cumin

  • 1/4 tsp smoked paprika 

  • 1/4 oregano 

  • 1 15 oz can of black beans

  • 1/2 tsp salt

  • 1 tbsp lime juice

  • Cilantro

cooking steps

  1. Heat up a 10 inch frying pan or a medium sauce pan.  Add olive oil.  

  2. Sautée onions, tomatoes, jalapeños, garlic, cumin, oregano, and smoked paprika until onions are softened.  

  3. Add black beans, can liquid and salt.  Some water can be added if more soupy consistency is desired.  Simmer for 15 -20 minutes.  

  4. Remove from heat.  Stir in lime juice and garnish with cilantro.
