I made this mango red cabbage slaw originally to go with my soft shell crab sandwich not only for something tangy but also for its colorfulness. It was based on a recipe for which I had the most of the ingredients. I needed the juice of 1/2 orange but all I had was lime. So I decided to sweeten the lime juice with sugar so that it’s more like orange juice. I also didn’t have cilantro but I had basil on hand. Typically basil or mint usually works well with fruit. So I went with it.

In the end, the mango slaw was a huge success with my family as it became enticing by adding a fruit to an otherwise un kid-friendly vegetable.. I intend to start pairing it with all kinds of dishes. The first thing that came to mind is tacos of meat, seafood, or even just the slaw which I did today.

If you are looking for a summer vegetable recipe that is refreshing and unique, this recipe is a must. I’m imagining all kinds of tweaked can go with any pork or fish dishes by trading herbs and acidity.

Ingredients


• 3 cups shredded red cabbage, about 1/4 of large red cabbage
• 1 medium mango diced
• 1/4 jalapeno pepper, thinly sliced with seeds
• 1/2 cup basil, thinly slice
• 2 tsp olive oil
• 1/2 tsp salt
• ground pepper
• 1 lime juiced
• 1 1/2 tsp sugar

Steps

  1. Cut a large head of cabbage in 2 and then one of the half into 2. Save the 3/4 of the cabbage. Cut off the core of the cabbage. Thinly shred to produce about 3 cups. Put into large bowl.

  2. Stand the mango lengthwise upright. Carefully slice off the two sides as close to the flat narrow seed as possible. Score each half in a crisscross pattern without cutting through the skin. Push up the center of each mango slice to turn it inside out and the mango slice appears like a hedgehog. Use a paring knife to cut off the mango cubes as close to the skin as possible. Watch this video. Add mango cubes to the bowl with red cabbage.

  3. Squeeze the juice of 1 lime, mixed it with sugar. Or use the juice of 1 orange.

  4. Add olive oil, salt, sugared lime juice, salt and pepper, olive oil and toss.
