Know anyone who hate chicken breast because they think it’s dry, tough and tasteless?  

This chicken breast recipe will convert them 100%.  The chicken is moist, tasty and tender.   Best of all, you don’t need to blanket the chicken in flour, egg, breadcrumbs and Parmesan.  Instead it’s a light and healthy dish that is super easy to prepare with only 5 ingredients which includes salt and pepper.

All it takes is 2 simple steps - marinate and sear.  I’ve been making this dish for a few years based my go to Italian cookbook Lidia’s Italian American Kitchen.

ingredients

  • 12 thinly sliced chicken breast cutlets or 6 whole breast (slice into 2 cutlets horizontally)

  • Salt

  • Pepper

  • 1/4 cup olive oil

  • 4 garlic cloves, smashed

cooking steps

  1. Wrap plastic wrap around 2 thin chicken cutlets.  Lightly pound the chicken slices with mallet.  Repeat for all chicken cutlets

  2. In a sheet pan, season each side of chicken cutlets with salt and pepper and rub with olive oil.  Press 2 sage leaves onto each cutlet or attach them with a toothpick.  Scatter smashed garlic all over the sheet pan.  Cover with plastic and refrigerate for 1 hour.

  3. Heat a cast iron skillet over high heat.  Add 3-4 chicken cutlets sage side down.  Cook until browned for about 2 minutes.  Turn the cutlets over and cook for another 2 minutes until inside is no longer pink.  Repeat and cook all the cutlets.
